A recipe – Easy granola


GranolaStuck at home on a cold afternoon, I wanted to make something interesting to keep my mind busy. I thought of granola, having recently read a lovely post by fellow blogger and friend Mondo Mulia. I decided, mainly for lack of ingredients, to pick and mix tho. I used some of her recipe, then browsed around the web, finally opened my cupboard and went for it. 
It’s actually fun to make, quite an interesting process (as you take it out of the oven and think ‘oh my gosh, it’s soft!’) and it is very satisfactory to open the jar the next morning and think ‘I made this!’. 
Besides, you can control how much oil you use and  you do not run the risk of eating palm oil. That’s the main reason for me not to buy shop granola, of course.

Here’s my take on the crunchy stuff.
100gr golden syrup
50gr single origin honey
300gr plain oats
3 tablespoons rapeseed oil
1 teaspoon ground cinnamon
1 teaspoon ground coffee 
1 teaspoon vanilla extract
30gr mixed seeds (I used a box of vanilla seeds from Graze, plus some extra poppy seeds)
80gr almonds unpeeled and crushed
20gr hazelnuts, unpeeled and crushed
100gr dry fruit (I used raisins)
35gr dry coconut flakes

 

Mix the honey (runny), the golden syrup, the oil and the vanilla extract in a large bowl. Add the oats and mix well ensure they are coated as much as you can. Add a bit more oil or honey in case you feel it’s too dry. 
Add all other ingredients except the fruit and the coconut and mix well. I added coffee having in mind a recipe by Phil Howard, however in my granola I used East Timor Arabica coffee which is very fine and similar to Indonesian, beautifully perfumed and finely ground.

Spread the whole lot evenly on a baking tray lined with parchment paper and bake at 160c (fan) for 15 minutes. At this point sprinkle the coconut and the fruit on top and bake for a further 15 minutes.

Finally remove from the oven and scoopthe granola onto a cool tray. Beware, it will stick to the paper! I will try a silicon tray next time as it was a shame to throw away a bit of granola. It smelt delicious! 

Let it cool and store in a jar or air tight container. It should keep for a couple of weeks – but I doubt it will last that long!
