Two recipes – Aperol Spritz & courgette salad

Aperol Spritz launches #SpritzSuppers recipes in collaboration with Polpo restaurant

A few months ago I attended an interesting event at the Campari UK headquarters where we learned how Russel Norman (of Polpo fame) introduced one of Italy’s most famous aperitifs to the UK. Made with Aperol, Spritz is actually one of the many aperitifs Aperol can help with. I remember for example ejoyig may ‘Apertass’ back in Napoli, whereby Aperol, slightly alcoholic bitter cordial, is mixed with the brightly coloured fizzy drink from Calabria called cedrata, by Tassoni.

I was recently contacted by Campari and sent some recipes created by Russel as canapes and starters to go with a glass of Spritz. Since summer is coming (although some days one would not think so!), these go really well for an evening with friends to relax after a days’ work. 

Amongst those recipes, I picked the courgette salad, as I love courgettes and they are fresh and summery. I made the dressing suggested with beautiful extra virgin olive oil Tra Due Mari and a fantastic balsamic vinegar from Modena, which I received to try from Italia Regina, small female-ran company from Milan Italy. The site stocks up a lot of good brands, and a lot of Italian excellencies too so worth a look.

Below the two recipes – salute!

Aperol

Aperol Spritz

Ingredients:
A bottle of chilled Prosecco
A bottle of Aperol
Soda, served from a syphon or chilled
bottle
Tall balloon or wine glasses
Ice cubes
Slices of orange

How to make:
Fill the glasses generously with cubed ice
First pour 3 Parts of Prosecco (75ml) over the ice
Then, pour 2Parts Aperol (50ml) into each glass in a circular movement
Finish with a dash of Soda (25ml)
Garnish with a slice of orange

Aperol was originated in 1919 in Padua, created by the Barbieri brothers, specialists in liqueur production since 1880.

Zucchine, Grana Padano & Balsamic Vinaigrette Salad

Ingredients:
Zucchine
Vinaigrette: extra virgin olive oil and balsamic vinegar Corso Duomo Modena IGP
Grana Padano flakes
A handful of mixed seeds
Chilli flakes
How to make:
Finely slice zucchini
Add 2 tbsp of dressing
Add shaved Grana Padano and the seeds and chilli flakes
Toss
Serve on small plate
